1 bunch arugula 1 bunch leafy greens 5 spears asparagus ½ avocado 1/3 cup broccoli ¼ cup pomegranate seeds (optional) 1 tomato chopped 1 red pepper sliced 1/3 cup walnuts (or almonds, pine nuts, pepitas, etc) ¼ cup seaweed
Combine all of the above ingredients in a large bowl. (Arugula contains indoles that deactivate cancer causing agents. Saponins in asparagus, lycopene in tomatoes, and sulfurane in broccoli sprouts also fight cancer, Walnuts are packed with heart disease fighting omego-3 fats and ellagic acid. Seaweed is a great source of hormone-supportive lignans.) Dressing: 1/3 bunch fresh basil 2 cloves garlic ½ cup lemon juice ¼ cup olive oil ¼ cup flaxseed oil dash of tamari or liquid amino acids 1 tsp pure maple syrup ¼ cup water Wash and dry basil and peel garlic. Chop basil and garlic and combine in blender or food processor. Add remaining ingredients and blend until creamy. Pour on the above salad and enjoy!
