1/2 cup quinoa, cooked and cooled 1 zucchini, coarsely shredded and all water squeezed out between 2 towels 2 large eggs 1/2 cup Chili sauce (Sriracha, Franks Red Hot, etc) ½ onion chopped 1 T. sage ½ tsp. salt ½ tsp. pepper 1 lb. ground turkey 1 T. spicy/dijon mustard
Preheat oven to 425°.
Line a large baking sheet with foil and rub with oil (avocado, toasted sesame, coconut, etc). Mix zucchini, egg, ¼ cup chili sauce, onion, sage, salt, and pepper.
Add turkey and quinoa to the above mixture and then mix all together.
Shape into 6 oval loaves and place on baking sheets.
Top each loaf with some of the remaining ¼ cup chili sauce and mustard. Bake 30-35 minutes with internal temp of 165°. Let stand 5 minutes. Enjoy!!
